Blueberry Bourbon Jam

A rich, slightly boozy jam made with fresh blueberries and bourbon.
Great on toast, biscuits, or gifted in small jars.

Ingredients

Instructions

  1. Prepare water canning bath and sterilize jars, lids, and rings.
  2. In a large pot, combine crushed blueberries and powdered pectin. Stir to combine
  3. Add lemon juice, vanilla bean seeds and pods, and bourbon; stir well.
  4. Bring mixture to a rolling boil over medium-high heat, stirring frequently.
  5. Add all sugar at once and return to a hard rolling boil, while stirring.
  6. Boil for 1 minute, stirring constantly (to ensure it will set use a thermometer and confirm it reaches 220 degrees F)
  7. Remove from heat and discard vanilla pods.
  8. Ladle hot jam into prepared jars, leaving about 1/4 inch headspace.
  9. Install clean lids fingertight, and then place in water bath for 10 minutes.
  10. Remove jars and let cool completely, and make sure they seal properly.
