Blueberry Bourbon Jam
A rich, slightly boozy jam made with fresh blueberries and bourbon.
Great on toast, biscuits, or gifted in small jars.
Ingredients
- 8 cups fresh blueberries, washed, dried and lightly crushed (about 3 lbs)
- 1 box (1.75oz) powdered pectin
- 1/3 cup lemon juice
- 2 vanilla beans, split and scraped (pods included)
- 1/4 cup bourbon
- 6 cups granulated sugar
Instructions
- Prepare water canning bath and sterilize jars, lids, and rings.
- In a large pot, combine crushed blueberries and powdered pectin. Stir to combine
- Add lemon juice, vanilla bean seeds and pods, and bourbon; stir well.
- Bring mixture to a rolling boil over medium-high heat, stirring frequently.
- Add all sugar at once and return to a hard rolling boil, while stirring.
- Boil for 1 minute, stirring constantly (to ensure it will set use a thermometer and confirm it reaches 220 degrees F)
- Remove from heat and discard vanilla pods.
- Ladle hot jam into prepared jars, leaving about 1/4 inch headspace.
- Install clean lids fingertight, and then place in water bath for 10 minutes.
- Remove jars and let cool completely, and make sure they seal properly.
Notes
- Jam may take a day or two to fully set.
- Any jars that do not seal should be refrigerated.
- Properly sealed jars will keep up to one year in a cool, dark place.
