Grilled Oyster with Green Garlic Butter
Great party appetizer! The butter also works with scallops, clams, or even steak.
Ingredients
- 1 or 2 cloves of garlic
- 2 tbs finely chopped chives
- 4 scallions, whites and green parts
- 1/4 cup italian flat leaf parsley
- zest from 1 lemon
- 1 stick butter
- Oysters
Instructions
- In a food processer add the garlic, chives, scallions, parsely and zest from 1 lemon. Pulse until finely chopped.
- Add the room temperature butter and process until smooth. Pause to scrape down the sides as needed.
- Transfer to container and store in the fridge until ready to use. Soften for 30 minutes prior to use.
- Grill the oysters on medium heat until they open.
- Using grill gloves open the oysters and cut from the shell, then add a scoop of butter and cook for another few minutes.
